This is a steamed dish where eggplants, cut into pieces, are stuffed with beef and boiled in a soup. Eggplants tend to be weak in their fiber structure, so when boiled or steamed, they reduce in size and leach a lot of moisture. For this dish, thin and tender eggplants are chosen. They are cut into 6 cm-long chunks, scored like the ones in cucumber kimchi, and placed in lightly salted water. The filling made of finely minced beef and golden oak mushrooms is flavored with soy sauce, sugar, green onions, garlic, sesame oil, ground sesame seeds, and ground black pepper. The eggplant chunks are dried, stuffed with the filling, and boiled in the soup. Once the eggplants are cooked, egg garnish is used as a topping. The eggplant soaks up the savory flavors of the beef and golden oak mushrooms and presents them in its tender flesh.
