“Sungchae” refers to kimchi cabbage, which was made famous by the popular TV show Dae Jang Geum, where the titular heroine comes up with the dish when she is forced to improvise from the lack of flour. The filling is firstly made with beef, bean curd, and mung bean sprouts. The leaves are blanched and then flavored with salt and sesame oil. The inner side of the kimchi cabbage leaf is coated with starch, filled, and rolled. Then, the rolls are steamed, plated, and provided with soy sauce with vinegar as a dip.
