This simple dish is made by cutting a hard-boiled egg in half, then topping it with cucumbers and red chili paste with vinegar. It was a snack served in some snack stalls in southern Incheon in the 1990s and the 2000s. The egg is boiled in water with salt and vinegar and stirred to ensure that the egg yolk will be placed in the middle of the egg. It is boiled for about 10 minutes, left to rest, then cut in half. The dish is topped with julienned cucumber, red chili paste with vinegar, and ground sesame seed. It resembles a canapé in appearance and indeed can be used as finger food. For the people of Incheon, this dish is a blast of nostalgia from their youth but stands on its own merits quite well as a tangy snack that everyone can love.
