Exit 3-1, 350m, 6min walk Keeping true to this Buddhist principle, Balwoo Gongyang serves vegetarian dishes excluding the use of the five forbidden pun- gent roots: onions, garlic, scallions, leeks, and chives from its recipes. As it is managed by the largest Buddhist order in Korea, the res- taurant’s strongest suit is that Buddhist values are strictly kept. The name of the restaurant ‘Balwoo Gongyang’ refers to the method of which monastery meals are consumed by the monks. The verses seen from the tables invite guest to engage their mind and soul with the restaurant and its Buddhist principles. One such visible verse reads, ’Eat food at its time, at its season, with no preference or in excess, and restrain from eating meat. Like the name, the restaurant provides an experience of the simple and plain, but deep culture of Buddhism. The restaurant’s design, which also merits attention, was created by one of Korea’s finest architects, ‘Seung, H-Sang. Be sure to make reservations days in advance, as it is required. 6

S e o u l Gosang is the perfect place for a bite after visit- ing Gwanghwamun or Gyeongbokgung Palace. Although the surrounding area is full of new trendy restaurants, Gosang stands out for its exquisite cuisine.
